CHRONICLE OF A MARRIED MAN - EVERY FRIDAY

My wife bought jollof rice in one eatery recently for one of my kids who requested it with ice cream for her birthday. She kept complaining of how it tasted very sweet, like there was sugar in it.

She asked me to taste it but I refused. I told her it was the job of glutamate seasoning like Vedan, Ajinomoto, etc, popularly called 'White Maggi'.

She was shocked that a big eatery like that would use such.
As I grew older, my body system started rejecting some foods. One of them is this white Maggi. It purges me seriously if eaten. As a result, I hardly eat out because most food sellers use it.
I worked as a chef and I saw things. Most of these big restaurants use it, they mix it to one of the ingredients in their kitchen, like salt curry, etc, so an outsider won't know. Then they use it to cook their foods to make them sweet.
Some caterers and those women who cook at parties also use it.
So anytime you eat out and purge, just know that may be the culprit (if your body reacts to it like mine).

Everyone knows that is the popular name that most Nigerians can relate with, except you of course.

Lady Port don't mind Nigerians. If it causes all what they listed above, then all Asians would have died cos that's their favourite seasoning.
They will go and eat food that is not well prepared or contaminated food and purge, then blame 'white Maggi'

    2. Cover your jollof rice with foil. That's the party rice secret. I make killer jollof now.

  15. This is one of the reasons I don't like eating out. Thank you for the advice. I don't like white Maggi. Something is off about it

  16. White maggi is MSG which is produced by the fermentation of starch like sugar cane. This fermentation process is similar to that used to make iru/dadawa, soy sauce, yogurt, vinegar and wine. It is used widely in cooking and in production of snacks like pringles, Doritos, cheese ball and all sorts of chips to increase umami.

It is not dangerous to consume, even the regular maggi, knorr and co. have MSG as their major flavour enhancer. If you don’t believe me, pls google the ingredients used for maggi or check a package at home.

Like someone mentioned above, it is used extensively in Asia especially in China and Japan; those folks do not have excess mortality from the consumption of msg. Haven said that, individuals may have intolerance to it just like people have intolerance to milk, beans etc. Do your observation and tracking and do what works for your body. Please don’t generalize or spread hysteria . Thank you!

    1. Thank you oh! That’s how I visited my mum and she had stopped cooking with curry and thyme, that they said it causes cancer. I was just speechless! The mass hysteria that they spread about everything in Nigeria is horrible, and the people who start these things are so dumb, they don’t even know basic science

  17. But white maggi (Msg) is not that harmful. I'm intolerant, so can't eat it, but it's not harmful. Regular maggi is even more harmful than it is, as regular maggi contains more sodium than Msg. And we all know too much sodium is not good for the body.
