@the yorubachic, its made with palm oil check out this recipe👇🏽

      INGREDIENTS:
      *2 cups of rice
      *Smoked fish of any type
*1-2 cooking spoons of palm oil
      *1 small onion, chopped
      *3tbsp ground crayfish
      *Salt
      *Seasoning
      * Pepper mix (tatashe(Red bell pepper), ata rodo (scotch bonnet chilli), tomato and onions blended)

      * Wash rice and set aside, if you want to parboil the rice, you can do so.
      * Place a pan medium heat, add palm oil and heat for about 5 minutes but don’t bleach
*Add chopped onions and fry till translucent, add the pepper mix and crayfish, seasoning and salt and cook till oil floats on top of the sauce.
*Add rice to the sauce and stir to combine, add water to cover the rice by 1 inch and reduce the heat. Do keep an eye on the rice, add water if required.
      * Cook rice on low heat till it’s almost soft, (add water to rice a little at a time as at when needed) check for salt and seasoning, add the smoked fish and stir carefully to combine.Continue cooking till rice is soft but not soggy. Take it off the heat and set aside to cool.

  6. I've become so lazy. Moin moin used to be every other week for me can't remember the last time I prepared it. Never baked. Still in bed. No either what to eat and hunger is already scattering my stomach. The thing with this kind of hunger is that you just eat anything you see (unhealthy).

  9. Good morning beautiful blog visitors! Your day is blessed🙏🏾.

My Oven baked Moin Moin was moist, but one has to be careful if not it will get dry and crispy at the edge.
Also, using a smaller pan so that the Moin Moin will not over stay in the Oven( I tend to use Muffin Pan).place in the middle of preheated Oven and bake for 30 minutes.

You can use any pan, but big pan will take longer to cook and making it dry at the edges.

When I baked it in a foil pack & one leaf(depending on the container that I are using, it does not dry out at the edges).

    2. @ prettyface, Lemongrass is used for treating some digestive tract spasms, stomach pain, vomiting, cough, joints pain (rheumatism), fever, the common cold, and fatigue.

I prefer the Lemongrass Powder or dried leaves.

  18. Baked moimoi is easier for me to make. I use foil plates and ramekin dish(they should be covered). Just make sure you keep some water in a pan in the oven before you preheat. Leave it in while the moimoi is baking. It keeps it moist and egdes do not dry out. I use this technique too when baking cake.

  28. Yes,I did bake Moin Moin one time and it was the last, because it turned out too dry.I guess the oven dried out the liquid as against steaming that cooks with vapour.
I am a moon moin addict.
