SATURDAY Morning Breakfast/Lunch Post

Today's breakfast inspiration is veggie scrambled eggs and fried plantain.

 




This is a very easy but satisfying dish anyone can make and it only takes a few minutes to whip up. You can add practically any kind of vegetable to your scrambled eggs; from peppers to mushrooms, tomatoes, and even leafy greens like spinach and pumpkin leaves.

Today, I've kept it simple with only a few ingredients; bell peppers, tomatoes, chillies, onions and garlic. Chop them up, fry for a few minutes, add beaten eggs and seasoning, fry for about 3 more mins...and... Voila! Easy peasy!!!
Serve with fried plantain.

And today's lunch inspiration is everyone's... well, most people's favourite meal - Jollof rice!!!





Nothing beats well made Jollof rice and chicken, throw in some moimoi and you're in food heaven!

  1. My cooking this week has been horrible.

    I was feeling very sleepy within the week while cooking beans and decided to put more than enough water hoping d sound of the pressure pot would wake me up but sadly, I didn't hear d sound.not until d whole pot turned black n d smell actually woke me up

    Just ystrd, while making breakfast of fried eggs and yam, I decided to add some ugwu to the tomatoes. Normally I always hv sliced ugwu and bitter leaf in d house and I keep in sperate tray.

    So I took some frm d ugu tray and added (if only I knew). After, a while, I tasted it and my sauce tasted bitter.๐Ÿ˜ฎ How manage? It wasn't bitter leaf I added. I was so sure of that. Tasted again, same bitter taste. Infact ,it became very bitter as all d bitter taste has washed inside. Then I decided to check and taste d raw leaves in d tray๐Ÿ˜€

    That was it my people. My mischievous kids(obviously my boy) have mixed part of d bitter leaf with the ugwu. Took frm d bitter leaf tray and added to d ugwu tray then some from ugwu tray to d bitter leaf tray and automatically, the whole leaves were bitter

    What did I do, I added enough water to d frying tomatoes so cook well in order for d bitter taste to cool off before adding my eggs.

    Last last, wen d water dried, my tomatoes sauce was not bad n I continued my cooking.

    But to be frank, it wasn't funny .
    About making spaghetti but in a local way . With palm oil , bonga, smoked fish and prawns

      @Amanda infact d time I used in recooking d tomato sauce was enough to cook jollofrice. Wish I can send d spaghetti but it's been downloaded already
      @Mrs R u know right๐Ÿ˜‚ I eventually added those black dried catfish ebevbarie๐Ÿ˜‚ d aroma was bae and d taste,๐Ÿ‘Œ was downloaded hot with water and pot soaked

  13. I ate the leftover boiled corn I cooked yesterday while I prepared something else for the boys.

    I already baked banana nuts bread for the week this morning.
    I'll be baking cake and meat pie later. That will do for the whole week. I would have added cookies to it but, I need me some strength ๐Ÿ’ช for other things.

    It will be fresh tuna fish with eggplant ๐Ÿ†, sweet potatoes ๐Ÿฅ” and some bell peppers and broccoli cooked and baked in the oven for later.
    I've missed eating nice meal ๐Ÿด.

    Make money and eat good food ๐Ÿฒ.

      @Victoria Ehis, it's a very simple recipe.
      Three very ripe bananas (never throw away your over ripped ๐ŸŒ) or as many as you want, depending on how many days you want it to last or even how full is your home.
      Chopped dried walnuts, cashew nuts and sunflower ๐ŸŒป seeds. You can swapped the sunflower seeds for any other nuts of your choice.
      Two well beaten eggs ๐Ÿฅš
      180gr of flour mixed with a teaspoon of baking soda/powder and salt. (you are free to use more or less flour. All purpose flour)
      100gr of butter and brown sugar (I also add coconut sugar to mine mixture, I use very little sugar in my baking, so you're free to add more or less grams of sugar)

      In a separate bowl, beat your overripe bananas
      Add your butter and sugar in a different bowl and mix well, then add your banana and mix with a spatula.
      Add your egg ๐Ÿฅš and nuts and mix and finally, add your flour and turn with a spatula.

      Before preparing your mixture make sure you have turned on your oven in 300 or 350 degrees (depend on your kind of oven) and also get your pan ready with a little butter spread around it and sprinkled it with a little flour.

      Pour your mixture into your read pan and bake for 40mins. It will come out very brown.

      Note: you can bake your banana bread without adding nuts.

    1. You means butter? Peanut butter?

      It's simple though. The truth isost peanut butters on sale contain sugars and hydrogenated oils and preservatives. Homemade is best. That way you know its pure. Sugar isn't Needd. Just blend it. I domt even add extra oils cos it's oily enough as it is

    I have moi moi wrapped in leaves in the fridge will take it with pap.

    Lunch will be white rice and assorted vegetable soup.

    I am not a fan of fried plantain and jollof though and nothing would make me touch that moi moi.

    I wish I could have a shot of brandy right now but I'm at work so I have to make do with coffee.On my second cup.Nawa for this rain.

  20. 1kgflour,250gbutter, 1egg depends on how soft u want ur chinchin you can add extra one, sugar 50g thats a hand full or more depends on taste, tsp baking powder, nutmeg/cinammon(optional) i notice nutmeg comes out nice wen making fries but cinnamon when baking.
    Milk flavour its in powder form also optional. Pinch salt and water.
    -Mix dry ingredients rub in butter with both palms l
    -whisk and add egg, mix
    -add water,then form a dough, dough shouldnt be watery or too hard. Knead.form into round shape
    -rest your dough for few mins
    -roll out dough with rolling pin
    -cut into desired shape.
    -deep fry till brown or when bubbles are out of the oil, if you leave it till golden brown it will get darker when brought down to drain oil.
