Breakfast Time.....And Lunch Tip!

Already had Breakfast?





I am concentrating on watermelon,apple,banana,orange,kiwi,Perssimon, all diced and mixed with natural Joghurt,honey and Oatmeal washed down with Coffee...thats my breakfast ......



LUNCH TIP!!!

MIX AND BAKE!

 This week's recipe is straight to the point. Just mix everything and bake!

*You can also cook this on the gas top. Just cover tightly with foil.

Ingredients (for 4-6 people)

2 cups of rice
500g of gizzard, chopped
1 very large green bell pepper, chopped
1 very large red bell pepper, chopped
1 large onion, finely chopped
2 garlic cloves, minced
2 large tomatoes, chopped
5 atarodo/scotch bonnet, chopped
1 teaspoon of ginger powder
1/4 teaspoon of thyme
1/2 tablespoon of white pepper
1 tablespoon of salt
2 stock cubes
2 tablespoons of olive oil
4 cups of warm water
Method
Preheat oven to 320
1. Wash the rice very thoroughly till the rice water is clear.
2. Mix EVERYTHING in a large baking dish or pot.



3. Cover with foil, and bake till done, about 35-45 minutes. If you're cooking on the gas top, start checking the rice at 25 minutes because the direct heat cooks faster.

  10. Love your breakfast ..will try it but egat in the world is persimmon? I no want purge abeg..chidinmma before the baking finish all nutrients will be dead on arrival.. Let me stick to my own method where ingredients are slightly fried with vegetables still crunchy and mix up with my boiled rice.Wanna be forever young...looks good anyway

  21. I tried last week's recipe this morning with beans flour but when I tried to flip over, everything scattered so I just gave up and made akara.

    1. Anything you fry can also be baked as a healthier option.Anything you boil can also be broiled in the oven. people have been making friend rice and jollof rice in the oven for ages. Moi moi, scotch egg etc can also be made in the oven

  48. macroni with tomatoes egg sauce and hot dogs. with a glass of hot milk. my kids really enjoyed it. making fishpie and fanta for lunch. dinner beans/plantain. Fab Mum i love that talk. Nigeria bad, not for us.

  52. @Mystique, are you using a non-stick pan? That is essential to prevent the batter from sticking. It tends to stick when I don't use one.

    @Mrs Diamond, any meat is fine. Enjoy.

    Lol @the dead vegetables comment. Do you ever eat reheated frozen soup? If you do, this shouldn't be a problem. You can always make a fresh salad to go with this. Try it, you'll like it.

    @ the tomato comment, my dear o no vex jare. Leave out the fresh tomatoes and add 1 tablespoon of tomato paste. This economy shaa
