Roasted Plantain Aka boli and Peppered Snail

Ingredients 

I finger medium ripe plantain 

4 medium sized snail

7 pieces of fresh pepper 

2 Tomatoes 

2 table spoon olive oil

1 large onions 

1 seasoning cube

A pinch of garlic (optional)

Method

Wash the snail with alum to make it crunchy.

Put in a pot and leave to boil adding salt and seasoning if you wish.

Peel the plantain open and make small incision marks on the body to allow it cook thoroughly and place in the oven or grill using medium heat. 

Pound the tomatoes and pepper or blend to a rough texture. 

Slice the onions. 

Place a pot or pan on fire and stir fry the onions with olive oil. Add the grinded tomatoes and allow to simmer for a few minutes. Put in the snail and seasoning cube. You can also add a bit of the snail stock to allow it cook thoroughly. 

Bring out the plantain from the oven and serve sizzling hot.

P.S

Snails are not in season now so I couldn't get the really big ones. Also you can alternate with fish, roasted or fried.

USEFUL HOME TIPS

Don't know where this might come in, but these are tips I came across and are tried and tested. They are very useful home tips

Unusual tips / remedies

When there’s pepper in your eyes, put a pinch of salt on your tongue and voila!! The sting is gone.

Save the gel packs that come inside shoes and bags.  They’re good at absorbing moisture so if you drop your phone in water, pit it in a bag of those gel capsules.  It will dry it out.  Works better than rice.

If you’re cooking rice/ spaghetti / meat, etc and its bubbling and spilling over, take off the cover, then place a wooden spoon over the pot.  No more spill.

For hiccups, sip water 7 times and it stops

When you have diarrhea, drink very cold coke.  It’ll stop it

If you have a cough, blend onions and add honey to it.  Take it hourly or every 2 hrs.  B4 d end of the day, the cough will disappear

For peppery hands, peal yam and rinse.  Use the water to wash your hands. You can also use palm oil, soap and salt altogether, to wash your hands.

Match stick, bitten at the wooden end when cutting onions, prevents teary eyes.  Same with chewing gum.

VIO and fake road worthiness

Dear Stella, good day, I trust everything is well with you and yours. I'm a regular BV but I don't comment. I trust my identity will be kept confidential. Stella, things are difficult in this country as it is and some people just create extra stress where there is none. On my way to work this morning, I was stopped by a VIO in  (Vehicle Inspection Officer) in PH. 

Well, they checked my particulars, my lights and everything checkable. Nothing was lacking as I was told. Suddenly, the man checked again and said one particular is fake.

 FAKE!!!

 I asked, how come, which one?. He said " the road worthiness". Huh? He asked a bunch of questions, where did I get it? Who did it for me? And all sorts, well I answered that I got this from one of their branches in PH. So they decided we go to their office. Fine I said, let's go! We got there and the person in charge of "my case" said it was fake. I asked how come? I got this from your office. And just now you agreed that that's your office, so why is this fake? I was asked to pay a hefty sum to release my car. My question is how do fake particulars leave their offices? Who signs these fake particulars?  Is this planned, that they issue you fake particulars, then pick a day to stop cars and check. 

Because these things are handled by their own people so how does the fake one leak. While I was there, heard complaints from other people as well, who got stopped with fake particulars! Even the VIO who stopped me said " we've been having this problem since last year." So a lot of people are driving around with fake particulars and they are not aware. I'm so pained...
