Basmatic Rice and Chinese Chilli Prawn Sauce

Ingredients
100g Basmatic Rice
1 Ball Red Pepper
1 ball Green Pepper
1 Ball Yellow Pepper
Sesame oil
Soy sauce
Corn flour
3 small sized chilli
1 large Onion and 1 small bulb of garlic
Vegetable oil
Salt to taste
1 chicken flavour seasoning Cube

Method

1.Wash the rice and place in pot to cook adding little water at a time so as not to make the rice soak too much water. Basmati  Rice cooks quickly unlike other brands. And don't Parboil.
2.Wash the prawns and boil with a little salt. Bring it down from the stove once it's turned pink.
3.Slice all the peppers and onions preferably in big chunky pieces . Slice the garlic in tiny bits.
4.Heat a pan or wok and put in two table spoons of cooking oil and first pour in your garlic and the pepper and onions. Stir fry on medium heat and pour in half a cup of chicken stock or beef stock and the prawns.
5. Put salt and seasoning cube to taste. Add a tea spoon of Sesame oil and soy sauce.
6. Mix a table spoon corn flour with water and add to the sauce to thicken to any consistency you want. Add a little at a time so that you don't end up with a sauce that's too thick. Allow to boil a little and your sauce is ready.

I couldn't get the Kingsize Prawn at the time I prepared this so I opted for small ones. But the Kingsize ones are juicier and simply divine. I'm a lover of Chinese cuisine and it gives me great pleasure that I no longer have to spend such an expensive amount to give my family a treat.

P.S all of the ingredients can be gotten at Shop rite. And the pic up there is my first attempt. I tell you it's much better now.

Have a blessed weekend. Peace, love and Chinese fried rice.

    1. No, that's 'Jasmine' rice, from Asia-Thailand, Basmati rice is from the Middle east. You don't cook the Jasmine rice, I think you steam it or cook with very little water. I have an aunty who eats nothing but Jasmine and Basmati.

    4. Depends on the brand of basmati you are buying. I used to hate it, but now thats the only rice we eat. Read instructions on the amount of water needed for preparation, add oil so that they can separate a little and use a rice cooker. Its very healthy, only ish is that its expensive, I buy 10kg for 8k in Abuja

    5. All u guys need is an electric rice cooker.. and madam Emike.. u never cooked jasmine or basmati if u hve ull know it takes about 10 mns only anything above that will turn to tuwo...

    6. I use to hate basmati rice but as that's all DH wants, I had to consult Google on how to properly cook it.
Soak quality of rice you intend to cook in cold water for about 30mins,
Rinse off and cook at very low heat and your cooking water should be the same level with the quality of rice, you might or might not need to add water till your rice is ready.
Soaking the rice for 30mins eradicates odour and it cooks individually, infact I noticed an increase in the size too.
Depending on the sauce , your rice is going with, you can even add 2 spoons of milk when your rice is almost ready.
      Thank me later.
