CHICKEN STIR FRY.
Ingredients
- Yellow bell Pepper
- Red bell pepper
- Green bell pepper
- Scotch bonnet (Ata rodo) *Optional
- Chicken strips
- White onions
- Spring Onions
- Green Beans
- Peas
- Irish Potato (Boiled and diced)
- Carrot
- Olive / Groundnut oil
- Seasoning (Maggi, salt, curry, etc)
Prepare the Chicken
Wash the chicken strips and place in a bowl.
Add some oil and seasoning (maggi, curry, thyme and salt) to the chicken strip and toss with your hand.
Refrigerate.
Prepare the Vegetables
Wash and de-seed all the Peppers and slice. *The trick is neither to slice too thin nor too long*
Wash and Scrape the carrots clean and slice in a similar method as the pepper.
Repeat same for all ingredients
NB – I prefer to cut all my veggies in separate bowls as they take different times to become tender.
Cook time
- Pour some oil (About 2cooking spoonful) in a deep pan or pot and heat
- Take out the refrigerated chicken and fry till golden brown.
- Remove chicken and reduce the heat to medium
- Add the red onions and scotch bonnet (Ata rodo) to the oil and fry for about 2mins (stir)
- Add the carrots, green beans, Peas and fry for another 2mins (Stir)
- Add all other vegetables, the diced potatoes and the fried chicken strips (Stir)
- Cover pot and reduce heat to low. Allow to simmer for about 5mins or till the veggies are tender.
NB – If the chicken was well seasoned, you would not need extra seasoning. If not, please season to taste.
To get this beautiful vibrant color, try not to overcook the veggies.
I served mine with Basmati Rice. Beautiful meal for a Sunday afternoon.

then the healthiest way for chicken
marinate and keep in the fridge or at least 10 hours and bake in the oven
thereby removing most of the oils
Recipe or how to make coconut oil. Buy coconut & remove d water then use kitchen towel to cover d coconut & break it wit Akaodo or hammer.Then slice it & blend wit d water u removed 4rm it,u can add more H20 if nt enof.I will be ryt back.
