    2. How to prepare Owo soup(itsekiri)

      Ingredients

      Potash(native salt)
      Dry pepper
      Assorted meat
      Crayfish
      Stock fish
      Palm oil(native)
      Starch or garri(if you're using garri pls filter the lumps out)
      Salt and seasoning.

      How to prepare

      Boild your stock fish and assorted meats till it's well cooked with plenty stock. Add your dry pepper.

      Pound the potash into powder and mix with water(little quantity of the potash)

      Slowly pour the mixed potash into the pot. After adding you will notice the content of the pot foaming. Allow it to foam and don't cover it.

      Soak your garri in water(if you're using garri) to form a thick paste or start to form a thick paste.

      Add the garri or starch to the content of the pot to thicken it and stir very well to prevent it from forming lumps

      Allow it to cook.

      If it's too thick you can add little water

      You will know the soup is ready when patches of oil floats on top


      Serve with starch/yam or whatever you wish to.

      I don't like the taste of it with eba.

    3. RECIPE FOR ATAMA (ABAK) SOUP


      INGREDIENTS:- Beef or bush-meat
      - 1 medium size smoked fish
      - 10 pieces kpomo (roasted cow skin)
      - 1 medium size stockfish head
      - 1 cup Perewinkle in shell
      - 1 bunch Atama leaves
      - 2-3kg Palm fruits
      - 2 Cooking spoon ground crayfish
      -1 small piece Uyayak (local spice)
      - 4 cubes of seasoning
      -Water- Salt to taste.

      HOW TO PREPARE:Using a blunt knife, cut a little piece of the tail end of the periwinkles and wash thoroughly to remove
      all the mud.

      Wash and boil the palm fruits for about 30 minutes or until they are soft. Strain off the water and pound in a mortar till the fibers come off the nuts. Heat the water until it is just warm; then add to the pounded palm fruit and mix thoroughly after which you strain out the oily extract.
      Wash and season your meat with salt, 2 cubes of seasoning and small pepper, then steam for about 5 minutes on low heat. Add about 1½ cups of water, stockfish head and. continue boiling for about 20 minutes till the meat is almost cooked, and remove from heat.
      Cut the atama leaves into very thin strips then pound for about 10 minutes till the leaves are finely pounded.
      Place the oily extract on the burner and allow to boil for about 5 minutes. Add cooked meat, and washed smoked fish, meat stock, perewinkle, crayfish, pepper and 2 more cubes of seasoning and uyayak (local spice). Stir and allow to boil for about 10 minutes.
      Add the atama leaves and allow to boil without stirring for another 10 minutes. Stir, and add salt to taste.
      Allow to simmer for another 15 –10 minutes or until slightly thick.
      Remove from heat and serve with eba, fufu, pounded yam or boiled white rice.

      SPAGHETTI BOLOGNESE.

      Ingredients:
      Spaghetti sticks ...one pack
      Liver chunk(large)...touch to make sure it dangles and is blood fresh.
      Carrots...4 bold roots
      Spring onion...one uproot
      White onion...2 bulbs
      Vegetable oil...2 teaspoon
      Red pepper...4 tabs
      Yellow pepper...2 tabs
      Green pepper...1 bell
      Aromate seasoning...half teaspoon
      Curry powder...half teaspoon
      Bacon...one wrap
      Salt..2 teaspoons
      Knorr cube...one tab
      Water...3 mil cups( normal teacup).

      Procedure:
      Wash the liver under running tap, dice into knorr cube size. Divide all ingrdients into two. Blend small bits of washed white onions,yellow and red pepper and turn it inside, add aromate seasoning, steam in a tight cover pot for ten minutes and set aside. Still covered.

      Break the spaghetti sticks into two. Cut the bacon into 5 pieces and drill 5 holes in all, pass the spaghetti in between. Pour two cups of water and set the spaghetti on fire. Medium steam. The pot initially won't cover tight because it has to be a small pot, but as it softens to the heat, is slides in and the pot covers then the sticks boil over. Add a little salt and one tablespoon of oil to leave it non- sticky. Boil for 15minutes and the sticks will curl over the bacon and then set aside. Do not open the cover lid.

      Fry the diced liver over low heat in a teaspoon of vegetable oil for 3 minutes, when it turns brown. Pour the remaining sliced yellow, red, white and green pepper, carrots, white and spring onion and into the liver, saute in the remaining vegetable oil, (please make sure it's in a non-stick frying pan) for 2 minutes, add salt and seasoning to taste.

      Finally pour the sauce into the spaghetti and turn properly. Allow to simmer for 2 minutes then serve.

      If you got a glass of soya mmilk. Then you are good to go.

    Ingredients:
    Sieved powered okpa
    Salt
    Pepper

    Preparation
    Make sure the okpa is sieved to remove impurities
    Put it the required quantity in a bowl
    Add palm oil and mix together with clean fingers
    When mixed, add lukewarm water to a thick watery consistency and stir
    Add pepper n salt to taste
    Pour in nylons or plastic cups
    Put in a pot with water n boil for 45 minutes
    Set it down
    Serve with pap or oats

    8. Ada Onyema,its called Bambara beans/nuts.
      As you probably know, the beans are ground to get the flour for okpa.

      Not sure the pudding itself has any other name.

      The name Okpa is a no for me for some years now because one of my sister in-laws fought me tooth and nail to stop his brother from marrying me. According to her I was an OKPA, a 30 year old working class Lagos chic.
      She had a 24 yr old UNEC undergraduate a softer chic, who was younger sister to her bestie, whom she wanted him to marry.
      Till today, me and am na Absolute Silence Code we dey. No leles.

      But i love the Enugu okpa anyway.

  24. Vegetable stew in my own way. No meat or some kinda ice fish or frozen but with some burger fish. Taste so really nice. And it goes for anything.

  25. I learnt dis recipe from nigerianfoodtv and I can't ever have enuff of it .....

    BATTERED PLANTAIN

    Ingredients:
    - 1 Yellow Plantain(use green plantains if you want it crunchy)
    - 1 egg
    - seasoning cube(maggi,knorr/powder (to taste)
    - Pepper(to taste)
    -  a big Pinch of Salt
    - a pinch of Baking soda(optional, but adds ''fluff'' to the batter)
    - 3/4  Plain Flour( about 2 tablespoonful)
    - Water (enough to form a thick paste)

    Preparation:

    1. Break the egg into a bowl, add the seasoning cube, pepper, salt and baking soda(if you're using any). 
    Mix well, add the flour and gradually add the water until you get a thick batter. Set aside for later use.

    2. Slit the plantain and peel off the skin. Slice the plantains thinly in diagonal shapes or any shape you like.

    3. Dip the plantains into the batter, coat thoroughly 

    Now, fry in hot oil until brown on both sides. 

     If you are left with some batter, don't pour it out, add some milk and make pancake.

    1. Yamarita | Dun Dun Oniyeri (Egg Coated Yam fries)

       Ingredients
      1 small Yam tuber(the size depends on the number of people you're serving)
      In the absence of yams, the firm Sweet potatoes can also be used. 
       * 2 eggs
      * 3 tablespoonful plain Flour
      * 1 stock cube/seasoning cube (crushed)(optional)
      * Vegetable oil for frying the yams
      * Ground pepper to taste 
      *  Salt to taste

      Cooking Directions
      * Wash the yams,peel off the skin and cut into thin rectangular slices
      *Rinse and place in a pot; add enough water to cover the yams;add salt to taste and parboil for 10 minutes. Pour out the content into a sieve and set the yams aside, to cool a bit.

         Tip: The yams should be firm and not tender. Remember that you'll be frying it later.
       This method is known as ''blanching'', you can test the firmness with  a fork;the fork should NOT be able to pass through the yam slices.
       
       The skin of the parboiled yam provides a ''clingy'' surface for the egg and flour mixture.


      * Next, break the eggs, add the ground pepper, crushed seasoning cube and salt to taste;whisk thoroughly and set aside.
         Pour the flour into a small bowl. You can add a little seasoning  into the flour(but it this is optional); mix well and set aside.

      * Now, dip each of the cooled yam slices into the prepared bowl of  egg mix and then into the flour. Turn over the yams to evenly coat it in flour.Make sure that the yams are well coated.Then transfer into a flat dish.

        Tip: You can also do it vice versa; that is,dipping the yams in the flour then in the eggs or doing egg-flour-eggs.All methods work really good and would give you same result.
       Another method is to use 2 ziplock bags;one for the egg mixture and the other for the flour. 
      My Hubby's tip:  If you are feeling lazy, mix the eggs,spices and flour together, add a little water and form a light batter. Dip the fries lightly and set aside.

      * Heat up the vegetable oil until moderately hot and fry the
      coated yams on medium heat, until both sides are golden brown.

      And your delicious , crispy Yamarita a.k.a Dun Dun Oniyeri is ready. Serve with omelet,  pepper sauce, Obe ata Dindin or any stew &sauce you have around. Enjoy!

    Spread cloesup on each slice of bread, put the roasted lizard and fried cockroach in between sliced bread with paste and toast with a toaster.
    Food is ready. Hahahahaha yummy!

    oat meal
    banana
    apple
    milk and sugar.

    cook the oat dice the banana and apple,then cook together.
    blend all together after cooking it,mix milk n sugar together the pour it in the blender and blend all together.

  37. I love a local Enugu delicacy called fio-fio and achicha...
    Fio fio is another specie of beans...it comes in brown and white colour...while Achicha is a dried cooked cocoyam...
    Preparation:
    6cups of fio fio...
    achicha...
    Palm oil...
    Onions...
    Scent leaf...
    Pepper...
    Salt...
    Knorr cube: optional....

    Boil your fio fio with a pressure cooker...when you hear the first pressure noise,you start timing...
    Fiofio cooks okay at 45 to 60 minutes from the time of the first hissing sound..

    Wash your achicha with a cold water and put them in a nylon bag and cook this time in a normal pot for 1 hour...
    This food requires a lot of Palm oil and onions...
    Slice your onions,grind your fresh pepper...i prefer Ose Nsukka...
    Put your palm oil in a pan, add onions and pepper, and lightly fry...add salt,knorr cube,scent leaf...
    The oil should not get bleached oh...and don't over fry the sauce...
    You can now pour the sauce on your boiled fio fio and achicha and fry...
    Check salt and your delicious fio fio and achicha is ready...
    I like stocking them in my freezer and warm them up the next day with enough palm oil...I allow them to get burnt too...

  38. Gizdodo.
    Ingredients
    Gizzard, red pepper, seasoning cube, tomato, onions, ripe plantain, vegetable oil for frying, salt,curry, thyme.
    Procedure
    Wash the Gizzard, place in pot, add water, curry, thyme, slice onions and add salt. Bring to boil.
    While the Gizzard is on the fire, peel plantain and dice into cubes. Fry until golden brown and place on kitchen towel to drain.
    When the Gizzard is done, drain and set stock aside. Dice the Gizzard and place aside.
    Blend the tomato, pepper and onions (not too smooth)
    Pour the vegetable oil inside a pot and place on fire. Add slices of onions, allow to fry till translucent then add the blended mixture. Add the stock from the Gizzard, salt and seasoning to taste, when the water reduces, add the diced gizzard, after two minutes, add the fried plantain and mix well. Lower gas and allow to simmer for two minutes.
    Can be served with rice, beans or eaten alone.

    COOK OAT MEAL AND DICE THE BANANA AND APPLE,THEN COOK ALL TOGETHER.
    AFTER COOKING PUT ALL IN A BLENDER,THEN MIX MILK N SUGAR TOGETHER WITH LITTLE WATER THEN ADD IT TO THE OAT AND FRUIT ,THEN BLEND ALL TOGETHER.

POTATO PORRIDGE: i use Irish potatoes, peel and cut the potatoes into the size you want, slice one medium size tomato with pepper and onions,chop up your carrots,green pepper, green bean. you can also add sweet corn and green peas depends on how colorful and rich you want your meal to be. Dice your chicken franks (frozen sausages). And cook your marinated chicken.
    PREPARATION:Pour two cooking spoon of oil (for those cooking for three or four people)into your dry pot and allow to heat for 10 seconds, pour in your sliced onions, pepper and tomato, stir fry for 1 minute then add your chicken stock and a glass of clean water, add curry powder to the mixture (lots of it) to give you that lemony color, add your seasoning cubes with salt then leave to boil for 3 minutes put your potatoes into the boiling soup then add your already cooked chicken (careful not to over cook the meat). When your potatoes are well cooked, then you put in your chopped vegetables and diced chicken franks allow to boil for another minute, then you start stiring till the water in the porridge becomes a little thick. FOOD IS READY!!!

  48. Home-made healthy couscous.

    Couscous is a wheat meal made from semolina and it is very good for weightless or healthy eating.It comes packed like pasta but it's in little grains.

    boil a little quantity of water in a pot, then add the diced green pepper, green beans,fish, prawns, sweet corn or whatever healthy ingredients you have, add to the boiling water and let it simmer for a bit. Add the salt, seasoning cubes,dry pepper. When the stock is boiled for a while, add the couscous , you can stir for a bit and leave the couscous to absorb the stock for between 2-4mins and your meal is ready to eat.

    2. Try it before you laugh. Like all great chefs, experimenting with different ingredients is essential. I was in a similar situation but followed her recipe for meat pie all the same. It turned out blastastic (sorry too much Disney junior lol).
      So try it before you knock it.

  52. Mashed potatoes with egg, corned beef(minced meat) sauce....



    Boil some Irish potatoes till soft and mash or press with metal (u can eat it like that tho)
    Cut tomato and pepper, put oil on the fire in a pot, pour in ur tomato and pepper with some diced onions and cut veggies (green peas, carrot, etc)
    Break ur eggs,add some salt and seasoning, pour into the fry on the fire, put down and serve with the potato....

  53. I have lots of recipes. Very easy too. First is my tender honey baked chicken thigh recipe. Its best served with fries (sweet potatoes, irish potatoes, yam)
    ingredients: a pack of chicken thighs its about 900g, olive oil, 4 crushed knorr cubes, salt and pepper to taste, soy sauce, honey, garlic and ginger.

    Method: wash your chicken thighs and drizzle a littke olive oil, rub till it's well coated. Sprinkle your knorr, salt and pepper, grate your garlic and ginger. Rub the seasoning it till evenly coated then ads about 4 tablespoons of soy sauce and 8 table spoons of honey. Put everything in a ziplock bag and refrigerate oveenight or at least 2 hours. Remove chicken from marinade and place evenly spread out in a baking tin, cover with foil and bake for one hour at 180 degrees. Remove foil, add marinade and bake for another one hour. Toss chicken around in the reducing marinade often. Remover when time is up. The chicken should be a lovely dark brown and sticky all over. Very tasty too

    Ingredients:
    uziza leaves( the leaf from which black pepper is gotten)
    Bell pepper (tatashe or rodo)
    Tomatoes if you want
    Onion
    Beef / chicken / fish
    Recipe: grind the leaves together with the pepper , tomatoes , onions. You can use a blender or grind in the market. Boil your beef , chicken or whatever protein you want to use, when it has started boiling pour the ground leaves inside the pot of meat. Put some palm oil , add your spice , salt to taste. Allow to boil , let it not be too thick or watery. Serve with pounded yam or any other solid or swallow like my people call it.

    Ingredients: a whoke croaker fish scaled and cleaned, 4 crushed knorr cubes, salt and pepper to taste, 1 whole lemon juice, olive oil 2 tablespoons


    Method: drizzle olive oil on fish and rub in thoroughly. Rub seasoning into fish, place fish into baking tin, pour lemon juice on the fish and bake till the skin is crispy

  59. Lemme share my own special ofada sauce recipe

    Ingredients :
    Rodo( dnt knw d english name o)
    Onion
    Iru(locust bean)
    Tomato
    Ponmo (skin hide)
    Dry fish, crayfish
    Turkey/chicken/beef
    Palm oil
    Maggi cubes

    N.b ; I used very few tomatoes and more of pepper. My Iru was very fresh too so it gave it a very unique taste. Used quite a helping of onion. Diced my Ponmo into cubes and shredded the dry fish.

    Process
    Blend the Rodo, tomatoes and onion with little water.
    Pour palm oil(ur desired quantity but it's better when the oil is a bit excess) and bleach till it becomes almost like vegetable oil.(don't open the pot o! Cover it when bleaching
    Remove from heat and after a while when it's cooled down a bit pour the Iru and after about 3 seconds add the pepper mixture.
    Add the Ponmo, fish et all u want to use
    Add your seasoning cube and salt to taste
    Cover and cook on medium heat.
    Check often so it dosent burn
    When it's ready, the oil wld stay at the surface of the pot.

    Serve with ofada rice or any dish of your choice.

  61. 2 large carrots (diced)
    A handful of green beans (diced)
    Half of a green pepper (sliced)
    1 clove of garlic (grated)
    Ginger (grated)
    1 stock cube
    A pinch of salt
    1 small onion (diced)
    4 large eggs
    A tin of sardines (mashed)
    2 Irish potatoes (diced)
    A dash of curry powder
    Pepper (as you wish)

    Break your eggs into an aluminum bowl
    Add everything to the beaten eggs.
    Add a little water into a pot, steam your mixture in this pot, double boiler style. Cook for 15 minutes. It is done when everything has set. Enjoy.

  66. Get fresh vegetable(gree) and a little okro,pepper onions,salt,red oil,seasoning,Ukpaka, crafish.
    Put the red oil in a pot,once it's hot(dnt bleach please),put ur already cut onions and pounded fresh pepper,fry a little,add crafish,Ugba and ur okro,fry a little more,then add your vegetable(lots of vegetable)add seasoning and salt to taste. Add water if necessary,but most times the water from the green vegetable should be enough. It can be served with boiled white yam,or boiled un ripe plantain.

  71. How to prepare pap(akamu)
    Ingredients to buy
    Fish
    Maggie
    Pepper
    Crayfish
    Salt
    And
    Onions
    Put pot on fire, add water. When the water starts steaming, pour all the mentioned ingredients above at once..wait for five minutes and then pour the already mixed pap into the pot.. You can leave it to steam for two minutes or more..
    And there you have your delicious jollof akamu..

    Beans, ripe plantain, onion, smoked fish I used smoked white fish, ground crayfish, green n red permito, mill pepper, Maggi, veg oil/baking fat I used baking fat tho.
    Method:
    Pick beans n place in a pot till soft, add diced plantain
    Add fish, onion, pepper, Maggi, pepper, crayfish salt, green n red permito.
    Add fat stir
    Leave to cook.
    FOOD Z READY.. U won't like to use palm oil anymore if u taste this..

  73. AFANG SOUP
    fresh afang(ukazi) leaves
    waterleaves(should be 2times the afang quantity)
    smoked fish, crayfish, stockfish, ponmo, any meat(goatmeat or beef is my fav)
    palm oil
    salt, pepper, onions, seasoning.
    Preparation: pick and wash d afang and allow d water to dry, slice it to very tiny shreds and then pound or blend a little, dont let it become too smooth. Pick,Wash and slice waterleaves very tiny too. Wash d meat, stockfish and ponmo and boil with little water together wit seasoning, onions and little salt. After 40mins(check if d meat is cooked), add smokedfish(washed and shredded), crayfish, blended or ground pepper and boil for 20mins, taste 2 knw if d seasoning is ok, d water in it shuld be very little. Add waterleaf and after 5mins add the afang and palm oil(enough oil) and dnt turn it. Leave to boil for 15mins and then turn everytin togeda. After 5mins, its ready. Its same method 4 edikangikong but u use pumpkin(ugu) leaves not pounded or blended and waterleaves insted of afang. Enjoy wit fofo(akpu)

  74. I have a lot of F-recipes but lemme share this super delicious meal called Poulet DG (Directeur Général)


    You'd need :
    3-4 Ripe plantain
    4 medium sized Carrot
    Chicken (breast, wings or thigh)
    2 Cloves of garlic
    3 med. Siz tomatoes
    Sweet pepper (Green, yellow & red)
    Maggi 1-2 cubes
    Parsley
    Spring onion/leeks (optional)
    Pepper-
    Salt to taste

    Prep.
    Peel n slice ur carrots & plantain in Disc shape, cut ur onion in half moon n d peppers in cube, chop the garlic, leeks parsley - set aside.

    Boil ur already washed chicken with stock cube salt n pepper until ready. Remove from d stock n set aside
    Heat up some oil n fry d chicken until gold brown, drain on a pepper toweln n set aside . Fry ur disc shaped plantain until brown .

  76. anyways this is my recipe for people who love vegetable with rice without going through the whole wahala of the exaggerated conventional 'epo'critic way lol.

    pumpkin leaves and efo green together(ugwu),

    one large onion and a bit of garlic,

    frozen sausages,

    lettuce,

    crayfish


    pour vegetable oil on fire, when its a little hot, add your already rinced sliced vegetables,keep turning to imitate frying and keep it from burning or sticking to the pot, after this add your grated or chopped pepper with grounded wet crayfish, use your manual blender to grate just a piece of chicken, add to the the sauce.....don't stop stirring, add your chopped frozen sausage and onions..note that all this should be btw 5mints cooking o.put your sauce down add your chopped lettuce ..... food have done don't kii yasef.... so enjoin with iresi,yam,plantain or potatoes
    this process keeps the veg alive ,very green and crunchy hmmmua
