PLANTAIN AND POTATO PORRIDGE
INGREDIENTS
•Quantity depends on food portion
. Spring onions
. Carrots
. Green pepper
. Red pepper
. Garlic
. Seasoning cubes ( knorr, royco or preferred spice)
. Spinach leaves 'Green' (optional)
. Irish potatoes
. Sweet potatoes
. Unripe plantain
. Fish / chicken / beef /assorted meat
• Chop green pepper and carrot in horizontal chunks to avoid thinness of the porridge, dice red pepper spring onion , spinach leaves 'green' and grate garlic, put in different clean bowls
• Chop unripe plantain, sweet potato, Irish potato into big chunks and put in separate bowls
• Get a big bowl with a lid; put chicken/ fish/ beef / assorted meat in it, add grated garlic, diced red pepper and onion, seasoning cubes (knorr, royco, or any seasoning) , chopped unripe plantain and sweet potato to the bowl ( do not add Irish potato as it cooks faster than unripe plantain and sweet potato)
• Mix the ingredients in the bowl (preferably with hands, avoid mashing it) and marinate for 10 minutes.
Marinating can be done by covering the bowl with its lid and leaving in a fridge or freezer for 10 minutes or putting content in a ziplock for 10 minutes ( I marinate in my cooking pot)
if you don't have ten minutes to spare u can cook right away with the lowest heat and increase heat after 3mins
• Pour content in a pot, add little water and cover pot and allow to boil, after few minutes add carrots, green pepper and Irish potato and leave to boil for 5 more minutes, reduce heat and add spinach leaves 'green', stir carefully and turn off heat.
Food is ready!! :)
• Serve it out and decorate plate/ food with any left over ingredient ( Carrot, green pepper, spring onion ) I used the stalk of spring onion.

@ Efe, u are not d only 1 that wants to learn how to cook moi moi. It is 1 of my hubby's best meals. But anytime i prepare it for him, he doesn't eat it much. I use plenty condiments, like fish, egg, other times, corned beef. But he doesn't enjoy it. But when he buys all those 50naira moimoi they usually sell in foil paper, u need to see the way he eats it with so much joy. I guess I'm not cooking it right.

Delete(I don't know the english name for them but in the market just ask for pepper soup spices)
Iwo
Urheri /Uda (you take out the seed)
Umilo
Ataiko
Irugeje
Lemon grass/scent leave (optional)
Ground crayfish
Yam
Seasoning cubes
Salt
Ground pepper
Goat meat
PROCEDURE
Cut goat meat in small pieces and place in a pot to boil, season as usual.
Blend all ingredients(umilo,atariko,iwo,irugeje,pepper and crayfish) together. Dry blending
When meat is half way done, cut your yam add to the pot with the meat inside so it cooks together
Add your ground spices
Add the Urhehi too
Season and add salt to taste.
Cover and allow to cook for like 20mins
Stir and you'd discover that the soup is thicken a little
Serve immediately.

For irish potato,the only thing that works for me is to boil it,and eat with vegetable sauce.or alternatively I bake it,sprinkle dry pepper and salt,and voila!
I have this little easy bake oven,perfect for quick easy bake healthy meals.
I can't share any recipe,cos I don't know where to start from.
Been cooking since I was 8yrs old,and everyday is an adventure.
Cooking is an art,creativity is key to churning out great meals.
I'm somewhat of a gourmet chef.

ReplyDeleteStep1: prepare your toppings, almost like a pizza. In this case I put, sardine, tomatoes, onions, bell pepper.
Step 2: prepare frying two pans on the store. Set to low heat. Spray pan with butter, margarine or oil.
Step 3: prepare your eggs; slightly whisk multiple eggs together, then allow to simmer in one pan. At the same time suttee your sides in the other pan.
Step 4: add all your spices to the sides. In this case I used powered garlic, adobo spice, crushed cayenne pepper, a little sprinkle of salt. Increase heat for the sides.
Step 5: once sides are well done. Pour contents on top of simmering eggs. Impress and evenly spread sides gently into the surface of the egg.
Step 6: flip omelet over

Cooking is more than knowing how make a clash of raw food in the pot. It can be tasking cooking for different people, my folks do not like much salt and would prefer no maggi.

ReplyDeleteRecipe for Spanish Omelette:
ReplyDeleteParboiled or raw Potatoes (your choice but precooking it makes the meal prep time less and you having to use less oil to cook the potatoes)- chopped in small cubes
Sausage - chopped in small pieces
Eggs - beaten
Onion - diced
Mixed veg - peas, carrot, sweet peppers all chopped nicely or you can simply buy the mixed veg bag.
Cooking oil
Seasoning - Your choice really - Maggi, knor, veg seasoning cubes etc
Alright, so heat your oil in a pan, add your onions and fry till translucent, add the chopped sausages, then the potatoes, fry for a few minutes then add the mixeg veg and season.
Once it's all cooked nicely, pour into the beaten eggs and mix together.
Heat oil in a pan again (one tbsp ) and pour the mixture into the pan. Let it cook and then put a flat plate over the pan (flat enough to cover the pan) and then flip over!
Let the other side cook and voila....
